A phin is a traditional Vietnamese stainless steel or aluminum gravity-drip brewer. It requires no paper filter; water slowly steeps through ground coffee and drips directly into your cup through a perforated filter plate and gravity press. This produces a concentrated, bold brew with heavy body and deep aromatic notes.

What grind size should I use for a phin?
Use a medium-coarse grind, similar to coarse sea salt or standard drip coffee. If the grind is too fine, the grounds will clog the filter holes or fall into your cup; if it is too coarse, the water will pass through too quickly and result in a weak, under-extracted brew.

What is the difference between Arabica and Robusta beans?
Arabica beans typically feature nuanced acidity, floral aromas, and fruity or chocolate notes, flourishing in higher altitudes such as the highlands of Sơn La, Vietnam. Robusta beans have nearly double the caffeine, lower acidity, and an intensely bold, earthy, nutty profile with a thick crema—making Robusta the backbone of traditional, strong Vietnamese iced coffee.

How fresh is your coffee?
Every batch is precision-roasted in small quantities right here in Ajax, Ontario. Your bag is packed and sealed shortly after roasting rather than sitting in a warehouse or store shelf for months.

Can I use your coffee in standard drip, pour-over, or espresso setups?
Yes. While our coffees pair seamlessly with a traditional phin filter, our whole bean and pre-ground roasts extract cleanly across pour-over drippers, French presses, Aeropress, drip coffee makers, and home espresso machines.

How should I store my coffee to keep it fresh?
Keep your beans in their original valved bag, sealed tightly, and stored in a cool, dark cupboard away from direct heat, sunlight, and moisture. Avoid storing coffee in the refrigerator or freezer, as condensation rapidly degrades the delicate aromatic oils.
